Training Kitchen & Restaurant

Hotel Management department is one of the oldest departments of the college. The courses offered under this department are Catering Science and Culinary Arts. Training Kitchen and Restaurant belongs to the department of Hotel Management. The students are provided training and given practical experiences to help them understand the working of the Hotel Management industry. The students learning the course have to know about four main elements or sections that come under Hotel Management that is front office, housekeeping, service and food production.
The course is for three years and they have theory as well practical classes. Four days in a week the students have to attend practical classes in the model training restaurant. The training kitchen and restaurant, consists of kitchen, a model bar and seating for customers. At the model restaurant the students are trained in cooking, serving, bartending and testing the food prepared as customers.
Students are divided into two batches as one batch does the food production and the other batch does the serving. In the kitchen, maximum 36+ students can work together. They work in groups of two for preparing the food and present a three course menu. Next the students who are up for service will serve the food to the customers in the restaurant. They have equipment’s like steamer, salamander, gridle, high and low pressure burners, combination ovens, dough mixer, table top and standing chiller, table top and standing fridge, weighing scale and under counter pass.
There are two model kitchen and restaurant, one is Casa Romana for the first years and Casa Francais for the second years.  For the first year students they have basic training kitchen and they have to practice Continental cuisine. The second years have quantity training kitchen and their focus is on Indian Cuisine. The third years practice Advanced training kitchen and their focus is on International cuisine.
The students are provided with the most basic and advanced training in all major sectors of Hotel Management. The college ensures that the students get placed for which they are trained exceptionally. Their working, language skills, service quality and standards are given special attention so that they don’t fall behind when they work for international hotels of excellent standards. Learning a foreign language is also must in order to improve your credentials. So all in all the aim is to make sure that they turn out to be best suited for the world out there.
